The Empire Torte Story
The goal to create a world class confection came after years of sampling the chocolates, pastries and cakes from the finest confection houses throughout Europe. Tuesday Evans became convinced that she could create a chocolate confection that would rival the world's best. Yet she was not content to just copy the taste of Europe, her confection had to be unique. She decided to create a completely new torte that would have a taste that stood on its own.


The search for the proper combination of ingredients and baking process would take years. Each torte is made using no automated production methods; all the ingredients are stirred by hand to ensure the consistency of the product.


The Empire Torte is not an ordinary confection and nor was it intended to be so. The dream was to create a confection that was made with the world's greatest care. No details are overlooked. The personal care that goes into each torte takes time. Each Empire Torte is made purposefully and with a great deal of pride. As a result, the yearly production is kept limited so that the product can remain true to the company's mission of making the world's greatest confection.



What is a torte?

A precise definition of a torte is elusive. What denotes a torte varies around the world. Some consider a torte to be any layered cake. Others consider a torte to be any cake less than four inches in height. The Empire Torte is characterized by the classic definition. which is a dense, flourless cake made with separated eggs.
